The Perfect Blueberry Muffins
Theres nothing like a delicious fluffy blueberry muffin. These muffins are packed with protein, fiber and minerals and fit a paleo + ketogenic lifestyle. They are perfect for cozy mornings along an almond milk latte.
Ingredients
2 cups almond flour
1 tsp baking powder (or substitute for 1/2 tsp baking soda)
1/4 cup granulated monk fruit sweetener (I like the Golden Monkfruit Sweetner by Lakanto)
2 eggs (or chia eggs for my plant based goddesses out there)
1 tsp vanilla extract
1/4 cup almond milk
3 tbs coconut oil
1/2 cup blueberries
Directions
Preheat oven to 350 F
Mix dry ingredients together in a large bowl.
Melt coconut oil, add and fold into dry ingredients. Slowly fold in the rest of the wet ingredients. Once combined, fold in blueberries.
Line 6 muffin tins with parchment paper liners (or generously grease the muffin tin with coconut oil.
Bake at 350 for 45 minutes.
